Entrepreneur, Chef and Sommelier – Stefano Acciai

Tell us a little something about your business...

Good food is part of my life since I was a kid while learning from my family that cooking for someone is taking care of somebody else happiness. After the graduation at culinary school and working in Italy and abroad for many years, I decided in 2012 to open my first restaurant and cooking school with the
purpose to meet people from all over the world and share with them a piece of our impressive food/wine culture. I consider myself very lucky when I think that mine it is not a job but is just what I like to do.

When was your lightbulb moment?

My lightbulb moment was the day I really understood how people that come to visit Florence or Tuscany should get back home with not just memories of good Italian food tasted in Italy but also the knowledge of the philosophy and deep passion that are behind. The kind of knowledge that you cannot really embrace if you just read a recipe cook book, because you need to live in person the experience of learning how to cook with hands “in pasta.”

What are your three words of advice?

Have a strategy – every battle is won before it is fought. Think positive – tomorrow comes today ; your positive attitude will lead you to successful projects. Enjoy what you do – people will always recognize and appreciate your natural mood.
